Healthy cooking: Salmon burgers with blistered asparagus and grilled lettuce
This is one of my favorite under 20 minutes recipes:
INGREDIENTS (serves 1):
1 head romaine lettuce, cut in half
9-10 asparagus spears, rinsed and trimmed
1 tsp balsamic vinegar
for the burger:
1 fillet of salmon, skin and bones cleaned, cut into small pieces
1 tsp mustard
1 tbsp flax seed meal
1tsp lemon juice
1 tbsp minced parsley
1 bulb garlic, minced
Pre-heat the grill or the grilling pan.
Wash the lettuce, sprinkle with a little bit of salt and balsamic vinegar and place on the pan or the rack. Grill for 3 – 4 minutes from each side.
Add the asparagus and grill for 5-10 minutes, turning occasionally.
In a food processor mix all the burger ingredients and pulse a few times. Be careful that you do not overdo it as it will turn the fish into a puree. Form a patty and place it on the grill for 3 -4 minutes on every side.
